To make chicken fried rice, deep-fry 3 chicken breast pieces in 2 tbsps oil till well cooked. Then coat the pan with 1 tablespoon oil and stir-fry 1 onion and a bag of frozen peas and carrots until softened, or about 5 minutes. Add 2 chopped cloves of garlic during the last 30 seconds. Finally add 4 cups of cooked rice and cooked chicken to the pan and stir well till no liquid remains. Top with green onions and enjoy!
